Manaeesh Zaatar


Ingredients

  • 3 cups flour
  • 1  cups warm water, about 110F
  • 2 tbsp. dry yeast
  • 1 tsp. sugar
  • pinch of salt
  • 1 tbsp. olive oil (to coat the dough)
  • 3/4 cup olive oil (to mix with the zaatar)
  • 9 tbsp. zaatar
  • 1 tbsp. water

Directions

  1. Dissolve the yeast in  the warm water and the sugar, let it activate for about 10 - 15 minutes.

  2. In a large bowl, combine the sieved flour, salt and the yeast/water mixture and knead until you get a smooth dough, adding more water if needed.

  3. Place the dough in a greased bowl and turn to coat all sides and Cover with plastic wrap or a tea towel.

  4. Allow the dough to rise in a warm place for about 45 minutes, until doubled in size.

  5. Roll the dough into 6 equal sized balls and let the dough rest for 15 to 20 minutes.

  6. On a floured surface, roll the dough and transfer to a baking sheet.

  7. Mix zaatar, water and olive oil together to make a runny paste.  Spread the zaatar and oil paste on top of the dough and bake in a preheated oven 475F until light golden brown.
